Mary Edith's muffins are the best!

Gingerbread

Heat over to 325 degrees.

Grease and flour a 9" square pan.

Mix together:

     1/2 c shortening

     2 T sugar

     1 egg

Blend in:

     1 c dark molassas

     1 c boiling water

Stir in:

     2 1/4 c all purpose flour

     1 t baking soda

     1/2 t salt

     1 t ginger

     1 t cennamon

Beat til smooth.

Bake 45-50 minutes.  

May make cupcakes/muffins.  Bake 27 min.
