Mary Edith's muffins are the best!

Tabouli

Pour 4 c boiling water over:

1 ¼ c bugur wheat

Let stand for 2 hours or until light and fluffy.

Strain or squeeze excess water out.

 

Add:

1 can drained and rinsed garbanzo beans

1 c minced fresh parsley

1 c minced fresh mint

¾ c sliced green onions

3 medium tomatoes, chopped

¾ c lemon juice

¼ c olive oil

1 ½ t salt

2 cloves garlic

 

Chill for at least an hour
